The famous champagne brand Dom Pérignon takes its name from a 17th century Benedictine monk, Dom Pierre Pérignon. The monk tried to make the best wine in the world for 47 years.
In 2010, the winter was very severe, the spring very dry and late, and the summer moderately hot. Two days of rain now brought the trajectory to a halt. Mainly on the Pinot Noir, botrytis mold developed in just a few days. A decision now had to be made quickly. Dom Pérignon used all its resources and saved the Pinot Noir grapes. The 2010 vintage is now described as 'rescued from the water'.
Tasting notes:
Straw yellow in the glass. The nose initially unfolds with notes of mangoes, melons and pineapple, which combines with aromas of orange peel and tangerines. At the end run the various flavors - full, massive, notes of spices, peony, jasmine and lilac. Long lasting on the finish.
