This unique sake, developed under the guidance of Richard Geoffroy, former Chef de Cave for Dom Pérignon, offers a harmonious blend of diverse rice varieties and yeast strains. Its production, influenced by both Japanese sake traditions and Western wine techniques, results in a sake that stands out for its balance, complexity, and adaptability to various culinary experiences.

Assemblage 2 is a sophisticated journey through varied aromas and flavors. It is characterized by its rich umami and glycerol mid-palate, followed by a freshness and crispness that makes a lasting impression. The sake's flavor profile evolves as it warms, revealing floral notes, winter melon, pear, and a hint of Chinese rock sugar, intertwined with a subtle spiciness and a touch of white pepper.

Produced in Tateyama, Toyama, Assemblage 2 is an expression of the pursuit of balance and harmony in sake-making. The blending process, undertaken remotely by Geoffroy during the pandemic, illustrates a remarkable commitment to quality despite logistical challenges. This sake is a blend of rice varieties such as Yamada Nishiki, Gohyakumangoku, and Omachi, paired with five different yeast strains.
